Not sure about wheel offset or width, but I'd go with a 17" rim and 315/70/17 (35") tire.

Hopefully our in-house wheel and tire expert Wandell will chime in. I know he has a 01-03 Screw with a 3" body lift and 35's and it looks damn good. Most all trucks with that size lift run 35's. Heck, there's even a member on here that runs 35's on his stock height Screw. I know he has some rubbing, but I don't think you'd have any issues with 35's and a body lift.

You can run a 35x12.50 on a 10 inch wide wheel (4 1/2 inches of backspacing) with a 3 inch body lift if you also crank up the torsion bars and trim a little plastic off the front bumper's lower valance. I personally have 33's with a 3 inch body lift.

How hard is it to crank the torsion bars?

Its easy. Tighten two bolts, measure, re-adjust as necessary, repeat until you are where you want. Drive around the block, remeasure and re-adjust if necessary. Go get an alignment when you're done. Thats it.
