4" backspacing

Will 4" work on 16x8 wheels and 285/75/16 tires and not stick out too much?

The will stick out 1 1/2 inches farther than the stock 16x7 wheels (4 1/2 inches backspacing), which won't be past the fenderwells.

rofl. Hey wandell, what is the rule of thumb in regards to how tires will fit rims. In other words, how many more inches can the tire be than the rim for them to still fit. (i.e. 10" rim will fit a 13.5" wide tire)

The best rule is to go by the tire manufacturers recommendation. At least stay close to it. BFG recommends a maximum wheel width of 9 inches for my tires, but I've had no problems in over 45,000 miles.
