head gasket job

Hi all, newbie to posting a forum but been reading for weeks. thank you all for info.
I'm workin on the cuz's 98 f150 4.6 romeo [engine code 6] 198,000 mi.
Was overheating so put new WP on had no fins at all, white smoke says head gasket to me,put 3 gallons water in on a 30 mi round trip.
I've got intake off and working down to heads, there's a sensor under the intake in the middle and can't find anything in Haynes book on it, I ain't putting it together without a new one. I'm gonna replace water hose short nipple there also.
I read from ya'll the heads are probably warped too, sooo another detail...

?'s
1 what is the sensor?
2 what other surprise awaits me?

I tear front off tomorrow for timing chains to pull heads [wish me luck]

Not looking to do full rebuild as she wants to sell it, it's in NW TN if anyone interested. I just want to finish it and not 1/2 a$$ it from my end if you know what I mean, wasn't what I expected in the beginning

Comments appreciated ya'll

Forgot to mention. When I pulled intake, all kinds of plastic pieces under. Is this a cover that shoulda been on top, the lower plastic [plenum?] is intact.

A little more history:was overheating when I got here and ran crappy, I done MOST of what I read here and and it ran better but kept loosing water, that's why I'm doing head gaskets

thats the knock sensor, probably doesnt need replaced unless damaged. those plastic pieces are normal, my factory intake shield was deteriorating too. Im sure it didnt run good if its going through that much coolant...
