4.9L over heating

i own a 1996 F-150 with a 4.9L inline 6. It is having heat issues so i figured its time to change the cooling system since its getting older, i put a new water pump, Dual core rad , thermostat , Hoses and a fan i also removed my ac rad for greator air flow since i do a lot of off roading, and the first trip down the dry trail about 10 miles doing a speed 30km 1600rpm i looked at my temp gauge and 250F was displayed and started to leak out of the resvoir
My brother and i made sure there were no air locks in the system and made sure it was not leaking fluid from the water pump or thermostat housing and the hoses before we left are shop. any help would be appraciated

You missed 2 important parts that need to be changed periodically: the radiator cap, and the fan clutch. Removing the condenser didn't help you much - the engine will work fine off roading with the A/C on (I did it 2 weekends ago). How old is your heater core, and have you noticed coolant leaking out behind the R front wheel?

Then something isn't working right (obviously). Water pump impellers sometimes slip on the shaft (they're just pressed on); t-stats sometimes stick (did you install it the correct direction?); caps don't always hold their rated pressure...

I'd start with another new cap. Then another t-stat. Then another WP.

Or those heat issues you mentioned could have caused more damage than you thought. I'd get some test strips for the coolant to see if you've got combustion byproducts in there. You may have a blown head gasket.
