well the heads are bolted to the block and the exhaust manifolds are bolted to the head.

It is easier to replace the heads when the manifolds are off. Stock manifolds are easy to remove as the nuts are fully exposed. The down side is breaking the studs. But don't worry about that as you are removing the heads and that makes stud removal/replacement real easy. Just so you understand, when setting the head back on the gasket with the exhaust manifold in place makes the assembly heavy on one side and that can lead to problems lining up the head on the dowels. My head gaskets are leaking and I have to replace the gaskets. I am trying to put it off till I save up enough money for new heads, read performance. I will for sure remove the headers before pulling the heads.
