Unhappy I'm stumped on Engine Temperature

My Ford F-150 1993 4.9L is running around 120-130 engine temperature instead of in the 190's. The gauge always reads right at the N on Normal.

I replaced the thermostat (twice thinking I may have put in a bad one) and still can't seem to get the temperature up.

Does anyone know what might be causing this low temperature.

How do you know it is running such a low temp?? Do you have a real gauge on it?
