I don't think I know everything, but what I do know are things I'm certain of.
Good luck with your career in auto repair. Really. It does take a lot of commitment, and if you've got 4 years of tech training under your belt, it shows you are at least serious about it. I've been wrenching since Jimmy Carter was in office. I got my ASE certs in the 1980's, and have owned and operated my own business since the early 1990's. Also, I have two manuals in my office, and both say to pull the engine from the top. Go figure.

It may be easier to leave the tranny in the car, Every swap I've done on those cars has been wrecked body good motor to good body blown motor so I did the motor/trans as a unit as I couldn't test the trans on the blown motor cars
if you leave tranny in most certainly it would be easy to pull from top but if you are going to take tranny and all it is best to drop out bottom. but then again the world class certified, gm top tech i work with doesn't know what he is talking about. he is only one of the top 10 gm techs in the world what does he know about removing engines and trans as a unit. but i will be the bigger man and say you are right. when it comes to removing engine only. there are you happy now.
Personally from experience I don't care what the manual says, at home in the driveway it is always easiest to pull the motor from the top. There is the exception to the rule such as the F-Bodys that you lift the car off of the motor but other than that if you are doing this at home go out of the top.
Lets see your basic H body car has what maybe 9=12" of ground clearance. Now lets put the car on 1' tall ramps so now you have 2' of clearance at the most under the car. The motor weighs atleast 250lbs. How are you going to get it from under the car??? I would have to say that the motor from top to bottom is atleast 2.5' tall then you add about 6" for a dolly to set it on and roll it from under the car. How are you going to get the front end of the car 3feet off the ground?
The 3800 is probably one of the easiest motors to pull in an H body car. To change the plugs alone on the fire wall you have to rotate the motor and that is pretty damn easy. I would leave the tranny on and pull it with the motor myself.
