oil in upper plenum
yeah, your sucking in the oil as it flys by the PCV system. The baffle makes the PCV pull from the top of the valve cover and not from directly above the rockers. Time to put on a higher set of valve covers. Typically, most motors should have taller valve covers put on when rollers are used that way the PCV systems can function correctly.

Although it doesn't sound like the cause in your case, another possibility for oil in the intake plenum is pumping oil into the fill neck too quickly with an air powered pump like the quick lube places use.
Oil will back up in the filler tube and run down the crankcase breather hose, into the inlet duct, and right on into the intake manifold. It will also flow back into the air filter box. if any intake valves are open, the oil will run down into the cylinder and will bend the rod the first time you try to start it up. The give-a-way is that it will be fresh clean oil.
Ford issued a TSB on this some time ago and reccommends filling with a funnel. Since you removed your baffles, its unlikely this is your problem since the baffle is part of the reason the oil backs up into the filler neck in the first place, I just thought is was interesting enough to mention.
