Engine idles fine, dies when I hit the gas

OK dont want to make this too long. Have a 1996 F150 XL with a 4.9L 6. Recently the engine bagan to smoke like crazy and wouldn't run. Was worried about head gasket and cracked head/block etc. Took the engine apart, replaced the head gasket, replaced intake and exhaust manifold gaskets and also the throttle body gaskets. Also checked head for cracks and cleaned the whole engine very well. Got everything back together properly. Now the engine no longer smokes, but it doesnt run right either. It idles like a kitten, but everytime you push the throttle it wants to die. Have replaced the oxygen senson, and fuel filter , and checked the IAC. Any other ideas? No current check engine lights.

RW

PS: Have also attempted to check for vacuum leaks. My thoughts include fuel flow regulator and manifold pressure sensor. If anyone has any ideas, I'd be obliged.
