If I remember right, the speed limiter on a stock truck will cut out the engine at 99mph. I would bet that if you removed the speed limiter on an otherwise stock truck, that you would at lease get to 115mph. But, I be a bit worried about stock tires and stock brakes myself. My stock tires were S rated for speed (112mph) and my stock brakes were adequate at best...
