For the most part, IMO, you don't want to see any sustained temps over the 200* mark.
The next thing is where is your trans temp sensor located? If it's in the pan, you still don't want to see much over 200*, but if it's in the trans output line (after the torque converter), then you will see 'spikes' of higher temps, but you should also see them drop again pretty fast and maintain a steady temp of around 180* or so..
When I tow, a lot depends on the outside temps. If it's > 70* outside, I will see 165-180* for the most part going down the hwy. If it's < 70* outside, I may only get to 150*......
Climb that big hill, or hit some stop and go traffic, and it'll go to 180* pretty quick. My trans temp sensor is on the trans output line.
The biggest thing you want to do is keep tabs on when the TC locks or unlocks. It's hard to tell, but it will feel like a partial gear shift..... Your rpms will drop or raise a couple of hundred rpms when it locks/unlocks and you should feel that 'extra' shift feeling....
The most my trans temp has gotten was 210* in stop and go traffic towing on a >75* day....

I have an edge programmer telling me what my trans temp is, the hottest its ever been is 190 and thats in 115 degree whether with the A/C on full blast flooring it and passing cars. other wise with cruise control at 80-85, the trans will run 155-170 in 100+ heat, 145-155 around town on a hot day. Towing a 9000 pound toy box 180 in 90-100 degree heat.
