I am going to put new wheels and tires on my truck soon. going to get the 2.5in poly kit from tuff country. problem is they had no info on wheel backspacing. is there a rule of thumb here?

The most popular wheel specs for the 04-11 F-150's is a 9 inch wide wheel with 4.5 or 5 inches of backspacing.

the ones on my truck now are 20x8.5. going to an 18x9 with mud grapplers. so you think a 5 in backspacing will keep them from rubbing? would like to put 35s but i think its going to have to be 33s

You are right. You will have to go with 33's unless you lift your truck more.

I just got 20x9 +18 offset XD's with 33in mud grapplers on a 2wd 08 F150 and have absolutely no rubbing.
