dual voice coil

If I have one 12" sub with dual voice coil, can I hook that up to a 2 channel amp? One set of wires to one channel and the other set of wires to the other?

Actually, My amp is a 4 channel amp, that I would bridge down to 2 channels, Can I hook up one sub to that if it is a DVC?

I wouldn't hook it up that way. What you will want to do is bridge that 4 down to 1 channel if possible and hook the sub up paralel to the one wire. If the sub is dual 4 ohm, that will put your load down to 2 ohm so also make sure the amp is stable running like that.

With a DVC sub and 4 channel amp you can bridge 2 channels into 1, then run that channel to both coils. You can bridge 4 channels into 2 nd run 1 channel per coil, but you need to make sure its a mono signalled amp and that the polarities are correct when you wire it.
