Sounds like it just needs to be re-charged with R-134a, as for the temp gauge it's probly either a bad sending unit, problem with wire, bad fuse..ect.
First let us know the correct engine...4.9L,5.0,5.8
On my 4.9L the gauge sending unit is located on the passenger side of the block...kind of hard to see, it's right under the exhaust manifolds. Check to see thats atleast connected and if possible try fallowing the wire. There will be kowledgable guys *caughPKRWUDcaugh* that culd help ya out when they see this.

The temperature sending unit is mounted in the intake manifold. It should read 74 ohms when cold. It could be the sender, a short circuit, or the gage itself as suggested, but not a fuse if the other insrtuments work. The a/c compressor clutch will not kick on if it is low on freon. Make sure if you charge it with 134a that you install the proper oil if it has not been done.
