How hard is it to change a head gasket on a 4.9 inline 6

Depends on your experience, your toolbox, your work area, the weather, your physical size & strength, your truck's condition...

You'll prolly want a buddy to help lift the head off the block. And if your tool box inventory includes a torque wrench, go for it.
