I also wanted to do this, maybe a center consel too. I think I'll try to get some from the junkyard and re-upholster them. I imagine with a little minor fabrication they would fit just fine.

I like the bench seat. It lets the passenger slide all over the place when you take turns too fast. It's also neat to get in one door and out the other.

I've seen these caddies that go over the gearshift on standards and rest over the tranny hump, with pockets for stuff and cup holders made for console-less bench seats. You'd also be surprised how much stuff you can cram into the glovebox also, mine literally explodes when I open the latch. Including a cassette adapter, portable CD player(too cheap to buy a CD stereo), a 12v adapter for it, all the papers, some weird looking tool that came with it, a little book of phone numbers from the previous owner, and about a dozen "authorized personel only access" tags to hang on things. The truck used to be part of a mechanical engineering fleet. There's also a towel, small LED flashlight, a small roll of tape and a drain plug for my jetski. Spare lightbulbs, and more stuff I can't remember. The downside is it's awfully hard to scoot over there, dig around for stuff and still be able to drive.
