Engine cleaning????

I just got my truck a couple weeks ago and I have been off roading about 3 times. Nothing really extreme but I have been though some decently deep ruts and creeks and my engine after every time is just caked in mud. I usually just spray it off real quick without getting alot of water on it but I have heard you can do that without harming the engine but just to leave it running but then other people say DON'T do it and that its worse f your gonna do it to leave it running. What should I do about getting all of the mud of the engine?

Another question I have it where are the MAIN places I should make sure and to get mud off of on my truck.
