rear winch
I like the idea of a hitch mounted winch.
I have seen the winches that come with enough wiring and connectors for the front and back of the vehicle.
With a front mounted hitch, you'd have the best of both, just pull the pin and connector, and move the winch from front to rear as needed.
Plus it could be stored out-of-sight to prevent theft.

How about mounting it on the trailer in a similar fashion as a boat winch? It would always be lined up to pull straight onto the trailer and it'll always be available incase you don't use the same vehicle to tow with all the time. They even make extremely heavy duty electric winches for boats which I would imagine could pull any "carcass of a vehicle" or a rolling vehicle onto the trailer. That's what I'd do.
The only thing I can think of is to get a gooseneck hitch for your bed then fashion a winch plate and stick it in there.

Damn good idea FX...that would give me a better angle to pull cars up the ramp and clear the trailer too. You da man!
Just be careful if you do go this route and never operate it from the cab of the truck. I can just see the line snapping and having a hook coming through the back glass at a high rate of speed. I've seen a winch cable snap before and it's not a pretty sight. I'm sure you know what your doing...but felt like I needed to say it.
