I put a set of headers on my 4.9L (from Clifford Research), an Offenhauser intake manifold and 390 cfm Holley 4 barrell (from JC Whitney) and a K&N filter.

Was it worth giving up the fuel injection?

On my '92, I replaced the stock exhaust with 3" pipe and a large dump truck type muffler. I also installed a drop-in K&N intake filter. I did notice an increase in performance.

I didn't have fuel injection as mine was an 86model 4WD with 4 speed and granny low. It did seem to produce more tourque and beleive it or not but my mpg increased with the 4 barrell over the OEM single throat.
