operating temperature question

operating temperature question
what is the temperature that the computer shifts from the "cold engine start" tables to the regular "operating temperature tables? Also were does it grab this teperature from engine block temps or coolant temps?
just wondering so can set my efans to turn on, I have it set to 172 right now.
I have a 160 T-STAT on the motor. The sensor I use for the activation for the e-fan is the plug in the radiator type. I have measured the temp on incoming fluid into the radiator with a IR temperature sensor and it is pretty nuts on of what the plug in sensor is seeing. I was thinking of lowering the fan temp turn on a little lower as before without the magnum and the 4 lb lower temps averaged in the 172-185 degree range. now with the 6 lb lower and the magnum, it average in the 180-195 degree range.
