AC not cooling consistently

I did some reading and watched some youtube videos and can't quite find this combination of symptoms so thought I would just ask the question being as specific as I can. I have a 2011 F-150 Platinum with Ecoboost. The AC has been working fine but noticed today when I left the house around 8am in Florida around 80 degrees that it would not cool down to the 72 that I had set. It seemed normal in every way. Fan blowing normal but air just felt cool, not cold. Lowered the temp all the way to 60 on both side and Fan was still running at same speed and temp felt about the same. If I raised the temp up to like 77, the fan speed would decrease as expected. Did this the entire 40 minute drive. Left it on 72 and the fan ran full speed. Kept is manageable.

Got in the truck around 2:30pm and the temp was about 91F outside and the air came on and was blowing cold and felt normal. Coming back home, seemed to be blowing cold and normal. Both passenger and driver side vents seem to work the same. Either all cold or all cool.

I know there are a lot of sensors and parts that can affect things. I'm guessing if it works normal at times, the freon is most likely fine. Just looking for some likely causes and how to test them before I take it in to have to it checked as I like to fix things myself when I can.

edit: My wife said it had done the same thing to her a couple of time over the past month or so. I also have BlueDriver that ran a full scan and it didn't have any codes.

Thanks for any guidance.

IMHO, time to hook up a set of gauges to the ac and see what is really going on.....that is the only way to really tell.
