temp gauge needle low c fan loud

1995 f250 460cu in 2wd
Im just curious; my temp gauge needle jumps and is never in the middle of the cold-h it always seems to just reach the c .new thermostat and clutch (fan) , heat doesnt seem right it. A couple times the needle went really hot on freeways w/ heat or ac on, also the fan is really loud after starting then goes normal. It has about 58k miles and i want it in top shape. Am i paranoid over nothing or is there a problem? any help? thanx
