it could be condensation in the vents that has gone mouldy

try an aftermarket deodourizer that you spray into the air intake (at base of windsheild) while running the AC at full fan.

This usually takes care of it.

It is probably the condensation is getting moldy. Simple solution: when you're using the AC, switch it off about 10 minutes before you arrive at your destination and turn just the fan on high. This will help dry the condensation up and get rid of the odor when you turn it back on. I'd be surprised if your problem is anything more than this.

Good luck.

Never leave your A/C set to MAX or OFF when the truck is shut down for a period of time during the cooling season. In MAX or OFF, the outside vent is shut and this condition is good for the growth of mold in the system. With the outside vent open, outside air can continue to circulate through the system and this will help prevent the growth of mold.

Get the A/C deodorized with an antibacterial spray and from then on, keep that outside vent open when you shut down the engine.
