You can get an amp with "speaker level input" and just tap off of the front left and right speakers.
Or you can tap off of the HU with a line-out converter.
Or you can get a powered subwoofer and tap off the speakers too.
Instead of cutting into the wiring harness you can buy the connectors going into the HU and into the vehicle wiring harness and build your own adapter. For less than $20, you can normally get both connectors. If memory serves me correctly you'll need:
Into the wiring harness Scosche FD23B or Metra 70-5520
Into the HU Metra 71-5520 (You won't need the expensive Metra 71-5520-1 hareness)
