Deer Salami

Deer Salami

So I have never been into really gamey meat. In fact, in all my years of hunting, Most is made into Jerky(Deer Jerky for me, water fowl jerky for the dogs).

This year, I filled all my tags throughout archery, primitive and gun. So I have a load of meat setting in the freezer. I decided to try something different and picked up a box of Grandma LaMure's Spice and Slice Salami Mix. I guess they also make pepperoni and summer sausage mixes and no casings are required. Can be used with any ground meat, though I used deer. Ill have to try it with Pig next time I get called down to do some killing (feril pigs are such a nuisance!)


Pretty good stuff, just thought I would share.

sounds good. I will give you my addy so I can do a review Have you tried using a brine on the meat before you cook it? It makes it tender and a lot more palitable. You may like the taste of deer steak more that way. You must get tired of salami and sausage? and I uderstand about duck.. I don't care for it.. but the brine might make it better to eat. Dunno.. something to think about.
