Proving Grounds or Skate?
Skate is more realistic, in that you won't be doing like 300' airs on a mini ramp or grinding around the world non-stop, but the controls are very, very, very, very frustrating at first, especially when you're playing sections where you're competing against somebody in a game of S.K.A.T.E and moving either stick an nth in the wrong direction will make you screw the trick up or slam quite gloriously when grinding a rail or something. But the control system is really cool once you get the hang of it, and it makes you appreciate how hard it really is to land a kick flip down a flight a stairs or 50 a rail.
Proving Ground is just like any other Tony Hawk game, it's easy to get a hang of and fun to play. Wanna do a 900 on a 12' mini ramp? Go for it. Drop in from a skyscraper onto an Evel Kenevil jump ramp, flying over a building and landing clean on the other side? No sweat. The cast of skaters in Proving Ground is better known, and the motion capture was done very well. PG is also based on real cities. FDR and Love Park in Philly are in Proving Ground, which is really cool if you really skate and know how important FDR and Love Park are/were.
It's a toss up either way, they're both pretty cool. If you have a short attention span and/or you aren't very patient with video games though, you'll probably hate Skate.
