goes without saying, a deer chili is the finger lickng good of a bowl of red.
Works better if you have some beef fat ground in, or at least some sausage.

I used to buy that brown bag of Shelby's but over the past three years or so they stopped putting everything in the bag that they used to.
If I get the quick spice kit like that now I get the 3 alarm chili kit ...used to be called Wyat Fowler's or something like that.
Shelby's comes out good but I have to add some things along with it

hey i'll throw my hat err recipe in the ring

well here's my entry:
1lb hamburg 3 teaspoon chili powder
1lb Jimmy Dean Spicy Sausage 1 teaspoon crushed red pepper
3 15.5 oz cans Kidney Beans 2 teaspoon mrs dash table blend
2 15.5 oz can tomatoe suace 1/2 teaspoon accent
1 teaspoon onion powder 1 medium onion (optional)
1/2 teaspoon garlic powder

Brown hamburg & onion, drain. Brown sausage and drain.
combine all ingredients in large pot and simmer.


i make it every year for my family reunion never have any left to bring home.
my family reunion is in july and its almost always hot and the chili still disappears.


ya i know you southerner's will say it's bean soup but up north we like the beans. but as some else said ya gotta have a good cornbread to go with it and if you like wash it down with these

Try this, I have won 3 chili cook-offs (without beans). You can add more diced tomatoes even flavored diced tomatoes. This is spiced so most people can eat it but you add more cayenne pepper (about 1/4 tsp) for an extra kick that is edible without over powering taste with hot.

The best advice is that this is a good basic recipe. Experiment from here.

Killer Chili

2- pounds ground beef, lean
1- Large yellow onion
2- garlic cloves
1- 6 oz. can tomato paste
1- 14.5 oz. can diced tomatoes
1- 7 oz can mild diced green chiles
1-30 oz cans of spicy chili beans, not kidney etc
8-cups of water
1- package of Caroll Shelbys chili mix.

In a large thick bottom stockpot brown the ground beef and drain most of the fat.

Coarsely dice onions and add to pot., finely chop the garlic and add into the pot. Cook 10-20 minutes until the onion becomes translucent.

The chili mix has 4 components, only use the chili mix, spice and salt. Throw away the masa flour, let the chili thicken on it’s own.

Add chili mix, spice, salt, tomato paste, diced tomatoes, green chiles and water. Stir well and simmer on low heat to reduce for about 1 to 2 hours. Stir occasionally when needed to keep from burning.

When the mixture homogenizes or the amount of spice froth becomes minimal, then add the spicy chili beans, if you add sooner then the chili will tend to burn or stick to the pan.

Simmer and occasionally stir for about 10-20 minutes.

Note that the chili will tend to scorch faster after the beans have been added.

Done

Add your favorite garnish and enjoy.
