I quit smoking. No really I don't, not as much as I'd like, but with the information superhighway at my fingertips I am an expert. I do work with a guy who is an expert smoker. I have picked up alot of good info from him, and his finished products are amazing. He likes to stay away from the sauces (BBQ) like I do, so we have similar tastes I guess.

Im quitting the tobacco smoking, thanks to my new truck.. but I just picked up smoking foods. I too dont like sauce, as I think it takes away from the meat flavor and covers up bad or poor cooking...just wanted to let you know about a forum I have been into lately. thesmokering.com lots of info there

Thanks. I'll give it a shot.

Yeah, I smoked cigs for years, and have all but quit. I haven't bought a pack in over a year. My best friend smokes, and he'll offer me one, I'll accept, and man it's gross now. One every 2 weeks or a month isn't gonna kill you, heck this mesquite smoke may kill me first today.

none of my friends smoke, they all quit. I was the last holdout. anyway, I got my smoker for xmas, and have learned a ton from this site. I thought it would be simple, I didnt know there was an art...

Well, My Superbowl plans changed this year. I usually deep fry 12 Turkeys for a local bar. This year the owner is letting another person do it. It kinda pissed me off, but i'm glad i'm not gonna freeze my **** off, because it's -2 degrees outside... I think he didn't think that i was up to it this year because i had that spinal cord tumor removed in July. I have been doing his party's for over the last 5 years. The other guy does some cooking for him every now and then too. Every time i wen't to the bar, the owner was not there. The day i went there, this guy asked if he was doing the party and he had not heard from me, and said that he would do it for him. Then i came in right after that conversation. So he apologized and he said he was not thinking clearly about who does what around here. He has alot on his plate, he has been fighting the new Smoking Ban (in Ohio), Plus health problems as well. I will be able to watch the entire game this year and laugh at him too

arent you a little late??? lol. had my fist at 415am....well, half of one...used a little for the brisket. Anyway, working on numero 3 right now..

brisket is almost ready was thinking it would take JUST a tad bit longer..oh well, means I get to sample earlier than anyone

Yeah, I'm defrosting the brats, and the oven is available in 30 minutes when the peach cobbler comes out and the brisket and pork loin comes in from the smoker and goes in the oven. Then it's chicken and bratwurst smoking time. I'll be eating well today!

I just got done making some mooseballs... Not real moose, not real ***** either! Just good ole' meatballs....

Recipe for mooseballs.
1 pound of ground beef
1/2 cup of bread crumbs
1/4 cup of milk
1 teaspoon of instant minced onion or (1/4 cup of chopped onion)
1 whole jalapeno chopped. If you want them hotter add more.
Mix and roll into 1 inch ***** and drop into boiling water. When ***** float take out of water and put in slow cooker or baking dish. Add some type of hot sauce (Pace picante sauce is what i use) , taco sauce, or hot salsa. The hotter the sauce the hotter the mooseballs. Cook for 2 to 3 hours. If you chill them after they are cooked, then reheat them they will be better. YUM YUM

Man, those sound pretty darn good. I'll have to give them a try sometime, but I think the wife will freak when I tell her what I'm cooking.
