Oh my God, LT -- you've never had Tater Tot Hotdish???

What a culinary treat you are missing out on! Actually, the dish is not Texan at all -- it comes from my days of growing up back in Minnesota!

(Note to all: Hotdish is "casserole" when you're speaking Minnesotan!)

In case anyone is wondering, here is the recipe:

* 1# 90% Lean Ground Beef
* 1 Medium Onion - Diced
* 1 Can Cream Of Mushroom Soup
* 1/2 Soup Can Warm Milk
* 1/2 Bag Frozen Mixed Vegetables
* Tater Tots

- Brown ground beef and onion, seasoning with salt and pepper to taste.
- Heat milk and stir into soup until well combined.
- Combine the browned beef, the soup mixture, and the mixed veggies and press into a glass casserole dish.
- Arrange a layer of closely-spaced Tater Tots on top of the mixture.
- Cover and bake for 1 hour in a 350-degree oven.
- Remove the cover the last 10-15 minutes if you like your Tater Tots crunchy.

Chef's Note: This dish is properly eaten using rippled potato chips (I like Baked Ruffles) and eating it like a dip!
