Without a doubt, go to the Stratosphere and do the "Big Shot". The other ride is new, I've never done it, but it looks pretty wild. And that Insanity ride looks...umm,,,,INSANE..

For car/truck/racing related stuff, go to the NASCAR cafe at the Sahara casino. They have a simulated NASCAR race that is pretty awesome. They also have a roller coaster that is pretty wild.
If you can get out to the speedway, check out the Shelby Headquarters. I am pretty sure the time is 10:30am every week day they have a tour of the manufacturing facility, and run you through the process of building the Shelby Cobra's. You actually talk to the workers while they are building them.
If you are into hunting and the outdoors, Bass Pro Shops is located at the Silverton Hotel and Casino.
As for gambling, if you are just starting out and playing card games such as black jack, head to casino's off the strip. The strip casino's hire the best of the best with dealers. They are trained to deal more hands per hour, and to keep the game rolling, giving you less time to think. You won't realize it unless you take a moment and step away from the table, but as soon as you sit down, they make you feel rushed. The casino's off the strip such as the Orleans, Reno, etc. have less experienced dealers and are typically more friendly then the strip dealers. The off the strip casino's generally have lower table limits for black jack as well, like $2-5 hands rather than a $10-20 minimum. The table limits will be higher because NASCAR weekend is here and when there is a rush of people in town, they do this.
I've also heard, but can't confirm, that the slots are typically tighter on the strip as well. Pick an amount of money you want to gamble with and stick with it. It's easy to go home depressed.
Hope this gives you some ideas and insight you can use.
