Cooking With Beer...Awesome

i've done this various times with beef short ribs
pork ribs
bone in porkchops

next i'll try venison.... but its easy and AWESOME
even better if you do it in a cast iron pot on a wood stove slow cooked...but anyway...

salt, black pepper
2 tablespoons veggie oil
2 cups chopped onions
1 can/bottle of your favorite brew
i can chicken stock
1 can cices or stewed tomatoes
4 sprigs fresh thyme
as much fresh garlic as you like
1 cup of roomers (mushrooms)
4 bay leaves

its best to do this in cast iron or something that can go into the oven right away..

liberly dress your meat of choice with the salt/pepper
sear about 4 mins per side in the hot veggie oil
remove meat
brown onions in remaining oil..about 5 mins give or take..
add beer,stock,roomers,tomatoes,thyme and bay leaves..
cook all day on wood stove or put in a 325 degree oven for about 2 hrs...
serve over wide noodles
or rice
or baked/mashed potato

have done all ..i love rice

this is easy and really good

(doing beef short ribs on the wood stove all day today..man it smells good in here )

Try cooking thinly sliced pieces of beef or venison, on a bed of onions, garlic, throw a couple of bottles of your favorite brew on and heat. A heavier sheet pan on a gas or even charcoal grill works well for this as you are not submerging the meat in the liquid but just cooking it in a 1/4" or so. If you want some more flavor a few tablespoons of butter works great.

I will occasionally do lunch at work for the guys and a few customers stop by. Something that goes over great is a box of premade burgers, grilled so they are just cooked through, on the top or warming rack of the grill I will have a pan with a little steak seasoning, chopped onion, garlic, beef broth, tequilla. Just take them from the grill and toss them in the pan of liquid.

This gives them some added falovor and I can start early and have a supply built up before people start to show up. When i do lunch it feeds 15-20 people sometimes more. I get carried away at times.

My beer recipe: A dozen Jimmies (blue crabs) steamed in beer till they're red. Serve on newspaper with mallets, ice cold beer, and good friends who don't talk much. I miss the east coast.
