Smile F150online Cookbook

I thought it might be cool for people to share some receipe's that are good.

Being a bachelor, the cooking is entirely up to me (or Tuff, and I am not a fan of Eukanuba). I have some good receipe's, thanks to my Itialian family, and I'll share most of them.

If we have enough interest, I'll volunteer to create a Word Document with all of the receipe's...granted, all I'll do is copy and paste it to a document. Once (if) there's enough, I can email it to anyone that wants it.

EASY MACARONI AND CHEESE




1 (8 oz.) pkg. elbow macaroni
2 c. cream style cottage cheese
1 c. sour cream
1 egg, slightly beaten
2 c. shredded cheddar cheese
3/4 tsp. salt
Dash of pepper
Paprika
Cook macaroni and drain. Combine cottage cheese, sour cream, egg and salt and pepper. Add shredded cheese, mixing well. Stir in cooked macaroni. Turn into greased 9"x9"x2" baking dish. Sprinkle with paprika. Bake at 350 degrees for 45 minutes.

Baked Rattlesnake

Prepare 5inch pieces of cleaned rattlesnake in the following manner:

Dredge in paprika seasoned flour. Dip in diluted egg roll in
toasted breadcrumbs Fry to a golden brown Transfer to covered
caserole dish and bake in 325 oven for about 90
minutes, or until tender.


Boiled Rattlesnake

Boil gently in water in which you've put a rather generous amount
of lemon juice and mixed spices (use a sachet or tea ball for the
spices). Simmer slowly for about 90 minutes. Remove, let cool
and remove meat from bone. Cut in small hor d'oevre size. Use a
seafood type sauce for dipping.


Rattlesnake Pate

Cook same as above. Clean all meat off bone. Grind fine in blender
(season to taste) for a pate.

Ms. Darlene's Red Beans and Rice

1 average size White Onion
3 toes of Garlic
1 Green Bell Pepper
1 Ham Hock (chopped ham or bacon will work too, but require different instructions as listed below)
One bag of small red beans
1 Bay leaf
Salt
White Rice


Instructions:

Rinse beans

Cover beans with cold water. Add 1 bayleaf. Add 2 Tablespoons of salt and the Hamhock. Chop (not too finely) and add 1/2 of the white onion. Slice the Bell Pepper into 6 or 8 pieces and add 1/2 of the Green Bell Pepper.

Cook all of the above over medium heat in water until the beans are almost done (about 1 hour of Low/Medium heat).

In a skillet, saute until tender the other 1/2 of the onion, 3 toes of garlic, and 1/2 of of the Bell Pepper (all chopped), with 4 strips of Bacon or chopped ham (if you didn't use the Hamhock above). Taste and adjust the salt in beans.

In a skillet, saute two smoked sausage logs (sliced into small chunks), drain grease and add the sausage to beans.

Cook down on low heat until water is gone and you're left with a thick consistency of ingrediets listed above.

Cook rice.

Put rice in a bowl, scoup red beans and pour over rice.

Enjoy!

Feeds a 10 -12 people, or makes dinner for 1 all week.

Ham and cheese sandwich:

Take two pieces of bread and smear mayonaise on one piece, and put a slice of ham on it and a piece of cheese. Slap the other piece of bread on top of that and smuuuuush it with your hand and take a big bite.

vension jerky

vension jerky:

Cut slices of vension into 1/4" strips and set aside.
In a large bowl place the following:
1 cup soy sauce
1/4 cup pf brown sugar
1 table spoon of ground pepper
1/4 cup of white vinegar
3 cloves of cut up fresh Garlic
1/2 cup of white onion.

mix all together and place cut up vension into mix and allow to marinate for a couple hours.

Now you can smoke it in a smoker or right in your oven (with wifes permission).
In oven place alumium foil on bottom of oven
hang strips of jerky meat over oven rack(s) and set temp to 150 degrees and allow to bake for 8-10 hrs. allow to cool and there you have it yummy (works for beef to.) simply the best.

I'll have to try and put some of my recipes into words, usually I just wing it, stay tuned. How could recipes from a fat guy not be good?

Pizza dough

3 - cups of bread flour

1 - cup of water

1 - tablespoon kosher salt

2 - teaspoons active dry yeast

I assume you’ll know how to mix it and let it rise

The simplicity of the ingredients is what does the trick; actually, it’s the absence of any oil, butter, etc.

Texas BBQ Sauce

Texas BBQ Sauce

"This sauce makes for some excellent tasting ribs, but certainly would also be great on just about anything. It's a very basic combination of ingredients that will yield a tantalizingly great flavor."

Yields 1 1/2 cups.

INGREDIENTS:
    DIRECTIONS:

    In a medium bowl or bottle, combine the vinegar, ketchup, water, sugar, salt and chili powder. Mix well and store in the refrigerator until ready for use.

    Beer BBQ Sauce

      DIRECTIONS:

      Heat oil and saute onion and garlic until soft. Add lemon juice, beer, chili sauce, Worcestershire sauce and salt. Cook over medium heat for about 5 minutes or until sauce bubbles. Use sauce to brush on meat during grilling or as a delicious marinade. Cover thick chuck or round steaks completely with sauce and let stand for several hours in refrigerator.

      INGREDIENTS:

        DIRECTIONS:
        Place salt, white sugar, lemon pepper, monosodium glutamate (MSG), ground black pepper, paprika, chili powder and onion powder in a medium container. Seal container and shake vigorously to mix. Use as desired when grilling spareribs.

        since we have a recipe for pizza dough...

        White Pizza
        Submitted by Andy (fat guy aproved!)

        Dough (home made or store bought)
        4-5 cups shredded mozarella or pizza blend cheese
        2 tablespoons grated or finely ground parmesean cheese
        1 package (6-8 oz) pepperoni
        1 lb italian sausage
        1 small can mushroom stems and pieces
        1/2 of a large onion finely chopped
        1 green bell pepper finely chopped
        4-6 cloves of garlic finely chopped
        olive oil
        garlic salt, oregano, basil, black pepper, season salt, crushed red pepper

        Squeeze the sausage out of the casing and brown in a frying pan breaking into pieces the size of nickel or smaller. Remove the sausage from the pan, drain out the fat. Add the onion, peppers, and garlic to the pan. Add olive oil and a pinch of black pepper and salt and saute the veggies until they start to get soft. While this stuff is cooking you need to spread the dough on the pan (I recomend one with holes in the bottom for the best crust). After you have spread the dough, take the sauted onions, peppers, and garlic and sprad it one the dough as you would if you were using sauce. Add a layer of pepperoni and cover with the shredded mozarella cheese. Sprinkle the parmesean cheese over the top and add spices to taste (oregano, basil, black pepper, etc... sometimes I use cayenne pepper, chili powder, paprika and season salt as well). Place the sausage pieces and mushrooms over the top of it all. Bake in the oven at 400 degrees farenheit (not the the 9/11 type) for 25-30 minutes. allow pizza to cool for 10 minutes and sprinkle the crushed red pepper on top.

        Is this what Ahhhnold meant by Girlie-Men?

        Ok, here's a Chilli recipe

        3 medium onions
        1 lb ground beef
        3 cloves garlic
        2 beef stock cubes
        1 med tin chopped tomatoes
        1 tin red kidney beans
        1/2 cup tomato ketchup
        Chilli powder (I use Schwartz mild)
        Dash of barbeque liquid smoke or similar
        salt and black pepper to taste.

        1. Chop and cook the onions in olive oil.
        2. When soft, throw the ground beef in and brown. Add a dash of liquid smoke while browning.
        3. When the meat is cooked, add the tomatoes and crush the garlic in.
        4. Give it a good stir and add all the other ingredients. Chilli powder and pepper depending on your manliness.
        5. Simmer for about 1 hour and serve with copious amounts of beer, crackers, cheese, rice or whatever takes your fancy.

        Top tips: Remember to ventilate bedroom well that night.
        Jalapenos can be added. Just remember to put a toilet roll in the fridge before retiring for the night.

        Fatass Chili (my personal favorite for tailgating in the winter in Buffalo NY)
        (you might have to eat this in the parking lot of a football stadium to get the full effect, the leftovers always make me feel better after I watch the Bills lose)

        2 large onions coarsely chopped
        2 green bell peppers coarsley chopped
        2 jajapeno peppers finely chopped (serrano peppers work well too)
        4 cloves of chopped garlic
        2 cans of chili beans (the pre spiced kind are the best but any beans will do)
        2 lbs ground beef
        1 lb hot sausage (the Bob Evan's or Jimmy Dean rolls work best)
        1 lb smoked sausage or chopped ham
        1 large can of crushed tomatos
        1 can tomato paste
        1 can/ bottle of beer (for the chili, 23 more for drinkin)
        1 cup chili powder
        spices: use at least 1 teaspoon of all of these, more to taste): caynne pepper, black pepper, cumin, paprika, season salt, garlic salt
        1 table spoon of liquid smoke (or you can use a good smoky barbecue sauce)

        Chop all the above veggies. Brown the ground beef and raw sausage in a large pot, DO NOT drain the fat. Add all the other ingedients (NOTE: do not drain pre seasoned chili beans, but do drain regular beans) and mix together. cover pot and simmer for 1 hour covered. Uncover pot and simmer uncovered for 2-3 more hours ot cook off some of the liquid. Taste constantly as you cook and season aprropriately as you go with the above ingredients to taste. I like to cook the chili until it starts to get thick but if you like soupier chili just don't cook off as much liquid. The secret of good chili is tasting while you cook and adjusting the seasoning so good luck, I never do this the same each time b/c I always wing it but this is a good rough idea. you can do it in your kitchen but it turns out best for me when I do it on a gas stove on the tailgate of my truck and I'm drunk.

        Damn english adam beat me to the punch on the chili recipe!
