I've also got a 2000 Expy, sounds a lot like yours but Estate Green. Superchip and Airaid on both.
Have you noticed any further improvement over time with the chip? How about PMG, see any improvement?
I love mine and so far I'm seeing a slight improvement in MPG, at least on the highway. I have a Gibson S/S Side Swept cat back on the way as well. Why did you decide to remove your cat back?
Sorry for all the questions. To find someone that's done a few mods to a new Expy is unusual.

Sorry I haven't replied sooner, I just got back from some downtime and haven't been online.
As for the chip, it typically takes about 500 miles from the computer to "re-learn" all of your driving habits and conditions. You'll see more MPG improvement with highway driving vs. city. About 1-2 miles\gallon is what I saw on my AWD. You may see better with the 4x2. How many miles do you have on the chip? (BTW, do you disconnect the battery prior to chip installation?)
As for the exhaust, the Jardine is an excellent, well-built product. The problem was with highway driving, cruising at 70 MPH around 2000 RPM. I had a drone inside the cabin that was driving me nuts. I patiently waited for 3 months for Jardine to send me a new tip, in hopes of muffling the sound a bit. Needless to say, they gave me nothing but excuses and no solutions. I finally gave up and sold the system. I believe this cat-back is better suited for pickups and I highly recommend it to those owners.
As for an exhaust upgrade, please keep me posted on your Gibson. I am still looking to upgrade mine...
FYI, my next scheduled upgrades are "bright white" head lamps and a Hellwig rear anti-sway bar.
