I second the Edelbrock recommendation. I started with these shocks on my 97 Explorer, and they made a world of difference. So, after about 3000 miles on my 2000 Expy, I installed another set of Edelbrocks. They will take care of all the things you are looking for in a shock upgrade. Granted, Edelbrocks are a bit pricey; but IMHO, are well worth the investment.
I did not perform the install myself. With my next-door neighbor owning his own auto shop, it was too easy just to ask him!
If the shock upgrade isn't enough for you, you may want to install an upgrade for your anti-sway bar (see recent thread from PumperMike).

I am trying to to get a little less roll, bounce and sway out of my new Expy. Thinking about throwing on new shocks to see if this helps.

What do people recommend. Edelbrock? Bilstein? Rancho? Tokizo? What would the differences in these makes be?

Try the Edlebrock's, at least they have a 30 day customer satisfaction. You don't like them, call them up and tell them you don't like them and they will help you out. If you need a number let me know and I'll give you a contact person.
