Will the truck run too lean? Engine damage? Or should i be alright

With a Cortex you are able to download and install Washoobi-specific tunes from Superchips for all supported intakes - K&N is one of them I believe. If not - do not install it. Tune correction will be required to run this safely.
Call their Tech support for assistance and/or browse their site.
BTW - you won't gain much from that mod, sadly... except perhaps elevated IAT's, some intake drone and a fouled MAF - some of these come overoiled from the factory. Best-practice is to wash it and reoil it properly before install.

I didn't want to mess with custom tunes nor do I know that much about tuners so I went with the canned tunes from the Superchips Flash Pac. I am also having the K&N CAI run lean issue with my 05 with the 5.4, is there a program from Superchips that I can update my tuner with to help alleviate this problem ?
I've run the cai and canned tunes for almost two years without any issues but just recently had to replace five spark plugs due to premature failure supposedly caused by running lean.
