The mirrors and power adjustable pedals are not on the same circuits as the instrument illumination (except for the switch's internal lights). Address those issues separately.

What fuse is blowing? Details like that are important to communicate when requesting assistance.

Dash lights ( as you know ) are fuse #18 in he Central Junction box, 5 A.
The only other part inline with this is the dimmer switch, aside from that, you would need to check from there out, to see if the previous owner had spliced anything to the instrument lights ( light an aftermarket gauge ? ).
Maybe try rotating the dimmer switch to a different setting before replacing the fuse ?

The power adjustable pedals are the battery junction box fuse # 112, 30 A did you replace this ? ( no note in your post about it ).

Power mirrors are Central junction box fuse #4, 5 A did you replace this ? ( no note in your post about it ).
