If I use a speaker level converter and I want to bridge the amp, how can I get input from both channels? Do I just tie the RCA's together, or will that cause some sort of issue?
Its an old Sony XM-250. Two channels 50 watts each. Bridged it is supposed to be 110 or so. To bridge the amp, it designates which RCA to use and then you do the + of one speaker out and the - of the other.

It doesn't matter how many speakers are connected to an amp as long as the ohm load is correct for the amp.

Just remember that however many drivers you have, divide that number in to the power output (rms watts), and each driver gets that much.

as for bridging and the rca's, you connect the rca's as normal, there nothing special to do with them unless you was to run 2 amps mono and using just one pair of rca's
but for bridging the speakers to the amp. yes true the more the merrier, but dont forget ohm loads and also that to many speakers to one amp, it wont work as loud because the amp is using the same 110 watts to power many speakers.
