I Pad on Headrests
Have considered buying one or two of the Griffin Cinema cases, but I hardly ever have more than myself and one more person in my truck.
I'll end up buying one soon, anyway, just to see if they are practical on long trips, etc.

I was thinking of the TouCoul CoulVue Ipad/2 head rest mount (http://toucoul.com/products/coulvue-for-ipad-2), but now thanks to DSGSTX81's suggestion of the Griffin Cinema, that may also be a candidate, especially at almost half the price.
However, the Cinema doesn't appear to have a cutout to allow a dock connector to be attached to power it on the go, unlike the CoulVue which is not a sleeve like the Cinema, but is a frame that just grabs the four corners and keeps all sides open to access all ports and buttons.

Another point of contention for me is the fact that my truck is a SuperCab, so I wonder if the screen would be uncomfortably close to viewers....
Update: After going to the Apple site and looking at all the pics, it looks like there is enough room to dock a charger, as the opening on the end sits high enough to accommodate this. As slow as my 1st gen iPad drains, though, I'm thinking it would take a 9+ hour trip of constant movies or surfing to completely power it down if no power was available.

I had the Ford Factory Invision dvd players in the backseat of my last truck,and I am not knocking them, but the quality is not the best,especially when you consider the almost Two Grand price tag with install(Canada) I was able to pick up two generation 1 pad 64g for half that so as long as I can find a way to mount them I am good to go.I think I am going to go with a company called incarbrite slick mounting system.
Another plus that I like, is movies play right through your stereo sound system once the I pad is synced. No fm modulator needed.

However, there is a recently released "DVD Player for iPad" app that you can use in conjunction with a "server file" that you install on a laptop to give you the ability to "stream" a DVD mounted in your laptop's DVD drive wirelessly to your iPad so long as you are able to create your own wireless access point on your laptop (Mac via Airport's menu "Create Network"; Windows via "Set Up A Wireless Ad Hoc (Computer-To-Computer) Network").
The app itself appears to be buggy, and, of course, you may have to keep the lid open on the laptop to prevent it from going into standby mode...
But if you will be bringing your laptop anyways with your iPad, another option is to load up your laptop with ripped DVD's since it has an actual physical hard drive that can store much more (which can be augmented by attaching flash/external drives to the laptop for even more storage capability) than the iPad's "flash" drive (currently available in 16GB, 32GB or 64GB only) and using another app, "Air Video" (also requires installing their Air Video Server on the laptop), or an even simpler method of streaming directly from iTunes using "StreamToMe" which does not require a separate server application to be installed on your laptop.
