What were the results of the cat tests as glc mentioned? If they're becoming plugged it could manifest itself in this way.

I have not had any cat tests done. I have no clue on how to do them. This problem has been coming on slowly over the last year or so and seems to be getting worse. My scan gauge used to be at 0% fuel adjustment then went to about 14% and now 20%.
A friend said it could be my EGR valve, but my truck does not exhibit the symptoms associated with that being bad.
I know im getting rid of the truck next year but this kinda of thing really bugs me and i need to find the answer.

Any competent exhaust shop or reputable garage will know as well - pressure gauge in an existing bung, IR thermometer, etc.
The other item not mentioned is laggardly, aging / comtaminated front O2's. And yes - those should have been another short-list item as it's easily tested via IDS. CEL / code threshold for those is factory-set so high that even in such a possible suboptimal condition, no errors would be detected without targeted switchrate tests.
Now you know why I suspect you are simply donating to yer dealer's personal Christmas fund....

Like MGD said, you could be running rich and have plugged cats, because one of the most common reasons cats get plugged is them being flooded with unburnt fuel from running too richly. If it it the cats, I'd replace with aftermarket, like Magnaflow, and not spend $1000 on them for OE-like replacements.
