What does the extra 1" or so in the back do to the extend length of the rear shocks?

I really like the look of these tires. Do you happen to have a good shot of the width of the tire? Sometimes the 275/70/18 tires look a little skinny compared to the tire height. From you pics though that tire looks pretty good.

As per the specs on the S/T Maxx sheet, it says the max wheel width for the 275/70/18 is 8.5". The Addict is a 9" wheel, did the tire shop bust your chops about it at all or do you have any air pressure issues? I want either the Addict our Monster from KMC and the S/T Maxx but have been bummed because those specs don't match up.

I wouldn't worry about putting those on a 9" wide wheel. My 275/60/20 (translates to almost exactly the same dimensions) tires have a max of 9.5" wheel and they have far less sidewall to stretch than your 18s will. That's actually really strange that they say the max is 8.5", which I confirmed is correct.
