I have a chance to pick up a factory hitch for basically a steal. Only problem I can see is that it is on a 2005 and mine is a 2007. I have seen them listed under separate numbers before. Will this fit or do I need to pass on this and not waste my time?
AFAIK it will NOT fit. They redesigned the hitch (and supporting bracketing) for the 2007 model year. Even if you look up aftermarket hitches (Reese, Putnam, etc), the 2007's have different part numbers versus the 04-06's.
Plus, on all the 04+ models, the hitch is not just a hitch. It is also the bumper support. In other words, the hitch is the entire length of the bumper. So installing a factor hitch on a non-factory-hitch-equiped truck is not as simple as attaching 4 bolts to the frame. It requires removing the bumper pad, bumper, and supporting brackets. And, when removing the bumper pad, it almost always breaks the tabs off, and requires purchasing another one (if you want the pad to sit flush).
Plus plus, in my personal expience, the factory hitch on my truck was weak. I bent 2 of them. And yes, I was within all my weight limits as published by FoMoCo. That's why they covered it under warranty. After the 2nd one, I spent my own money and bought a stout Reese hitch. No problems since. That would by my suggestion to you also.

is your new reese hitch similar to the factory style where you only see the receiver and not the whole cross bar? if so can i get the part number?? i've been looking for a hitch for my 08 but all i can find is the "bulky" style that shows the whole crossbar.
