How do I adjust the tire size with an XcalIII??

Same as the title, I have 70 series Cooper tires on stock wheels. I think the speedo is off.

and what are your thoughts on the JLT CAI?

Take a look at Tire Rack's website, find your tire, then under specs for that tire you can find the rpm (revolutions per mile). If you have a custom tuned Xcal you should have "options". Go there and look for the closest rpm listed, you can input this into the programs in your Xcal. Most tuners list the rpm's in multiples of 5, such as 500, 505, 510, and etc.
Personally I would advise against the JLT intake for your vehicle.
