Just like thumper said you will be looking for gears for those new tires and then the edge.

Good to have goals. Just remember that you are going to have a serious power loss with those 35s and stock gears. Plan on regearing to 4.56 with those 35s to keep a reasonable amount of performance out of the truck...
Off roading that set up the way you are talking about is fine, just keep out of the mud, and technical rocky stuff. For trail riding and stuff like that you should be fine. Make sure you go with another truck and take a tow strap.
