California truck now in Tx

Are there any emmision things I can/should remove to help mpg, horsepower etc now that it is a Tx truck?

Make friends with a guy that does inspections then pull all of it off.

Signals, horn, insurance out the door.

Don't bother, you'll gain absolutely nothing by doing it. All you will end up doing is setting codes like crazy and making the truck undrivable.
