Okay... I've got this vacuum gauge hooked up and now I'm thinking it may be reading correct... when RPM's increase does the vacuum actually decrease? and vice versa? At idle it bumps up to around 20 and then when I accelerate or I'm running down the highway it drops to around 5, and if I'm riding along at 70 and let off the gas suddenly it'll jump back up pretty quickly... is this correct?

As engine speed (and load) increases, vacuum decreases. Sounds like you've got it hooked up right; at idle, an engine in good mechanical condition should have about 18-21 in/Hg with a steady needle.
