The reason Im getting away from my other wheels is because the size:

Rockstars 20x8.5 +35 (6.1" Backspacing)
Incubus 20x9 +30 (6.2" Backspacing)

Which one will stick out more? I want it to be either flush or sticking out.

basically, a rim with roughly 5.5" of backspace will sit like stock under the wells. the less backspacing, the more the wheel will stick out...the more backspacing, the more the wheel will tuck in... so both are about .6-.7" tucked, but are wider than stock which pushes them back out- so both will be pretty much flush all said and done
