I dont know because i never seen the full tilt with the snaps in person...But i can tell you that my snapless never came undone by itself. I did a recent 50 mile highway trip doing appx 90mph most of the way and had no problem at all. The cover also had 18" of snow on it this past winter with no problems.

but can you take the actual cover off from where you hook it into the plastic tray? Or do you have to remove the whole cover bars and all?

1. Tilt the cover up, undo the shocks and attach them to the frame, tilt cover to 45 degrees and it comes out frame n all.
2. You could remove the cover from the frame. Not sure why you'd want to. Do step one, undo one corner of frame and slide the cover out.

I got the snapless and it's a royal pain to roll up due to the thick lip along the edges, far easier to remove it. Not sure if the snaps version is easier to roll I would think it is.

I just installed the snapless version and need to take more pics of it. Went on in about 45 minutes start to finish. Its a piece of cake to remove the whole thing as already mentioned. As far as leaving the frame and rolling the cover up, I keep a allen wrench in the console so if I need to haul something spur of the moment and am away from home so I can't remove the whole thing I just unscrew 4 allen head screws and slip the rear bar loose. You just slip the cross bars out of their sockets and throw them in the bed and roll the cover up to the front and fasten it with the velcro strips sewn in place. Its best to slip the rear bar back on so the frame is ridgid. Or you can just roll the tonneau up, slip the middle bars out, raise the frame high enough to get whatever it is in the bed and drop the frame back down around it without unscrewing anything. Lots of easy options.
