Leather
I'd say Lariat if you must have leather. If you dont want leather then I would not get either of them. I'd go with the XLT and customize it a bit. I think the main difference in Lariat and XLT is leather, the digital crimate control and turn signal indicators on the mirrors.
Yeaup-- I admit it. After nearly ten years in Wranglers I was looking for a little luxury in my 4x4 ride. I always bought my Wranglers maxed on the options, but nothing was ever power, lol. In all that time I usually left the rear seat in the garage and ran it as an open cab pickup, hence the want for a bed still, otw I could have gone with the Grand Cherokee. I did also definitely want the leather.
But besides the turn-signal mirrors you mentioned, which more importantly to me in the winter are also heated mirrors-- which I don't expect anyone to understand the attraction of until you have tried to keep clear your sideviews while driving as they (well forget reaching the passenger side anyway) continuosly get coated in slush every minute during heavy snows 
Besides that there were also a number of sizeable upgrades to standard options in the jump from XLT to Lariat that I wanted and it would have cost just as much to get them as XLT options (or were even unavailable except in the Lariat-- i.e. Trip Comp):

Trip Computer/Message Center Standard
Rear Window Defrost Standard (I opted to go Pwr Sliding Rear Window and so had to give this one up, but still the option price is less for Lariat than XLT because power is already wired)

Fog Lamps Standard
Keyless Entry Standard (bling, but useful if someone with me wants to go "wait in the truck" so that I don't have to give up my keys or worry about them starting it)
PS. The red does look sharp Thayer
. I really like both colors evenly, but at least round here the blue is rarer. I like your tinting. Did you get it done somewhere pro? Is it just the front sides or did you do the windshield as well?

They just did the two door windows in 20%.
