Slow acceleration NO CEL catalytic converter?

1997 f150 xlt 4x4 4.6
symptoms:
loss of torque and power
slow acceleration
slower on hot day
slow to gain speed (get up to freeway speeds)
slow to climb hills
did I mention it’s slow
very low gas mileage maybe 10mpg (guessing don’t criticize)
NO CHECK ENGINE LIGHT

Things I’ve done:
MAF (have 2 tried both before cleaning and trying both)
cleaned throttle body (have 2 with all sensors tried both)
removed air filter and drove/ got new air filter no change in either
fuel system cleaner
never had a misfire so holding off on plugs wires and coils

had the truck for a little over a year, bought it with a blown head gasket put a used engine in it from my totaled truck, same year but 4x2. The symptoms only change with the weather and don’t Change much just slower when it’s hot than when it’s cold but still slow when it’s cold and I know it sounds fine cause it’s supposed to be slower in hot weather but it is not fine I’m talking real slow. It will make it up to 100 mph but will struggle to get there I almost feel like I’m gonna brake something at 90. No shaking or misfires just can feel it struggle. Out of the time I’ve had this truck only one code popped up for an hour until I cleared it and it was one of the 02 sensors but has never came back. This is my 3rd f150 and the slowest ford I’ve ever driven without a cel. It’s pretty mind boggling, I don’t have access to mode$06 scanners or live data all I have to diagnose is an infrared thermometer but I’m not 100% sure what I’m looking for when using it. My last truck ran 100% fine and the only things on this truck that aren’t from my last truck are the trans and exhaust and the trans seems fine fluid good i don’t wanna change it cause I’ve had bad luck changing fluid while experiencing problems.

Take it to a muffler shop and have the exhaust tested for excessive backpressure.

Thought of that and have planned to do it myself because it would be cheaper to buy the tool but I wanted to wait it out to see if the symptoms got worse or the cel comes on but still nothing permanent after over a year and the funny thing is I have the exhaust from my last truck but it has different pipe angles being it wasn’t from a 4x4 and a shop wants almost 500 to change them because it’s 4x4, I have a HF welder but not sure if I’m ready to tackle the catalytic converters and can’t afford being out of a vehicle for more than a day so time is an issue but since without me even mentioning it you brought it up I’m definitely gonna do the back pressure test within the next few days and I’ll update

Bruce, your subjecting your self to being to tight on diagnostic trouble shooting to the point of guessing.
No CEL does not mean there is no issues.
You need to use a Scanner to look at live data for being out of normal range. Then correct for any found until all are normalized.
Reason; the program is written with values placed to allow wide deviations for conditions, aging and wear.
If not, the CEL would come on for every small limit infraction that occurs. You would not be happy with that either.
This is why Scanners are used and understanding of the system are available.

The auto shops around here have fuel pressure gauges for loan to check the fuel pressure. Do that. Then take it to an exhaust shop to get the cats checked. The one time i had that done was about 20 yrs ago and Midas charged $35 if I remember correctly. The drilled a hole in the exhaust in front of the converter, held a pressure gauge that had a rubber tip against the hole and measured the pressure. Mine was okay so they welded up the hole. You've probably wasted enough gas to pay for some repair by now.
