1997 F-250 5.4 triton shuts off while driving without warning

I have had issues with my truck in the past; as far as not starting after shutting it off. When I would try to start it, the truck would only make a single clank, then everything appears to loose power. (Example: headlights, dashboard lights, overhead dome light, power windows, cont....) But usually it starts back up eventually. I was thinking it was simply a bad connection somewhere. This time, my truck shut off as I was driving down the road, it made no strange noices, was not sputtering or knocking. None of my service lights came on, did not loose power and my headlights weren't dim. But my truck would not start and had all of the same symptoms as before when I had problems previously. I took it to firestone. They said that the computer wouldn't connect with the diagnostics system. Then they said the next day that the engine must have siezed up due to no oil. But as far as I understand, Fords have a low oil pressure shutoff switch which cause the engine to shut off before they sieze up?

No, they don't. They have an idiot light (or idiot gauge that drops) that is supposed to come on if there is no pressure.

but there was no light and my pressure guage was reading normal.

As I understand it, the gauge will read mid-scale if the pressure is at least 7 psi. That isn't enough to protect the engine on the highway. Get someone to put a wrench on the end of the crankshaft and see if the engine will turn by hand. If it turns, it isn't locked up. How many miles on this engine?

Take the belt off before turning engine, that way you know it's actually the engine locked up and not a FEAD component.

Then they're probably BS'ing you or trying to get rid of you for whatever reason. Besides, even if the engine had seized, that wouldn't explain why they couldn't connect their scan tool to the computer.

If you truly had been running with no oil pressure the engine would have made some very loud and unpleasant noises right before it died. Anyway, there is no oil pressure switch or safety as you though there might be.

I'd have it towed out of there and take it somewhere else where they know how it's supposed to work.
